It’s that time of year again: a time to eat delicious food and be thankful for all we have. This holiday season, try the Fourcast’s recipe for Apple Cider Cupcakes, and you’ll have one more thing to be thankful for.

Apple Cider Cupcakes

Ingredients:

2 eggs
1 2/3 cups flour
2/3 cup sugar
1 cup apple cider
1 stick softened butter
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon vanilla
1 can cream cheese icing

Directions:

  1. Prep cupcake tins with paper liners.
  2. Preheat oven to 350 degrees (325 degrees for a convection oven).
  3. Add all the ingredients to a mixing bowl.
  4. Mix until smooth.
  5. Fill cupcake liners 2/3 of the way with batter.
  6. Place tins in oven, baking for 19-22 minutes (17 minutes for a convection oven).
  7. After baking, let the cupcakes sit until they are cool enough to frost.
  8. Frost with cream cheese icing, garnish with a pinch of cinnamon and enjoy!
