The State Fair of Texas has been a cultural institution since 1886. Although Fletcher’s Corn Dogs are a classic, in the past 11 years the Fair has been recognizing for its creative fried food. At the 11th Annual Big Tex Awards, eight finalists presented their fried creations to a panel of judges. They were selected by the State Fair of Texas employees. Two dishes were awarded: For Best Tasting, the Holy Moly Carrot Cake Roly; and for Most Creative, the Smoky Bacon Margarita.
